This delicious dessert consists of three very simple parts.
Apple compote
6 apples
1 vanilla pod
1,5 dl apple juice
Rice syrup to taste
Custard
3 dl oat milk
1/2 tsp vanilla powder
Rice syrup to taste
1-2 tsp kuzu/corn starch for thickening
Nut crunch
1 dl shredded coconut
1 dl finely chopped hazelnuts or almonds
1 dl coconut blossom sugar
1/2 tsp cinnamon
How to make the apple compote
Peel the apples and cut into chunks. Put in a pot together with the apple juice.
Cut the vanilla pod in 3 pieces and make a cut down the center of the pod, so the vanilla grains can easily leave the pod and flavor the compote. Add the vanilla pod pieces to the pot.
Bring to a boil and then let it simmer for 30 mins, until the apple pieces are so soft that you can turn the mix into compote with a fork.
Add rice syrup to taste.
How to make the custard
Add the oat milk, vanilla powder and rice syrup to a pot and bring to a boil. Turn down the heat and let it simmer for 5 mins.
Dissolve the kuzu or corn starch with a few tbsp of water. Pour the thickener to the simmering mix while whisking constantly, in order to avoid lumps from forming.
How to make nut crunch
Mix all ingredients on a baking tray covered in baking parchment.
Roast in the oven on low heat (120-130 degrees Celsius) for 20-25 mins, until golden in color.
Once all ingredients are done, layer them in a serving glass and enjoy!
