This is a recipe that Steven's daughter Christel uses for a busy life with work, kids and plenty to juggle. She makes a big batch which she keeps in the freezer and can then create quick and healthy dinners for the whole family.
Ingredients:
1,5 kg carrots or sweet potatoes (boiled, pureed)
1,5 kg chickpeas (boiled, crushed)
1 l cooked quinoa
1 courgette/squash (raw, grated)
Mix all ingredients and season with:
1 dl flour (with or without gluten)
1,5 tbsp ground/crushed flaxseeds
2 tsp salt
5 tbsp ground, dried onions
+ any other seasoning you prefer, like oregano, masala powder etc
Freeze in portioned packages and when you defrost to cook, shape the mix into a patty. Turn the patty in flour or breadcrumbs and fry in oil until golden on each side. Serve with rice/noodles, vegetables and/or a sauce.
A batch like this is enough for roughly 10 dinners for Christel's family.
